WHere is a home-style version of a beverage found on a new menu. It's a party-sized premix which is bursting with the flavours of the festive period, rendering it excellent for hosting a festive gathering. Save the extra citrus syrup for brunch beverages, desserts, or to make additional servings of the drink.

Ingredients for the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Cocktail (yields 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Method
For the Cordial: Place all the components in a saucepan, heat until it reaches a simmer, agitating to dissolve. Then, turn off the stove and leave to cool down completely. Decant to a sterilised bottle, close it and refrigerate it chilled, it can be stored for up to one month.
Preparing the Batch Mix: Pour every liquid ingredients in a sizeable container, let it rest for an hour, then filter it , ideally through muslin, so it's perfectly clear.
When ready to serve: Measure 85ml of your batch mix into your mixing glass packed with ice, and agitate lightly for one minute to cool it down. Filter into a cold coupe glass or similar, garnish with the cranberries adding the final touch with a light spray with the mandarin essence above the glass.
